Deep Fried Date Buns
|Pitted dates||1 Pound|
|Shelled walnuts||1 Cup (16 tbs)|
|Frozen orange juice concentrate||4 Tablespoon|
|Grated orange rind||4 Tablespoon|
|Oil||2 Cup (32 tbs) (For Frying)|
|Confectioner's sugar||1 Tablespoon|
Cut dates into chunks about 1 inch square.
Place in blender 1/4 at a time, with 1/4 of the walnuts.
At high speed, blend into finest particles.
Turn into a large bowl, add orange juice and rind, and knead into a large ball.
Place a spoonful into the center of a dough circle and twist into bun form.
Roll in the hands until smooth.
Heat oil in the wok to 375Â°F.
Fry the buns 6 to 8 at a time until just golden brown.
Drain well, cool, and sprinkle lightly with confectioner's sugar before serving.
