Jalapeno Kaiser Hamburger Bun

My version of the Jalapeno Kaiser Cornmeal Bun, used for the "Burn'n Love" burger at Red Robin.

Ingredients

Active dry yeast 1/2 Ounce
Warm water 2 Cup (32 tbs) , divided
Sugar 4 Tablespoon , divided
Canola oil 1/3 Cup (5.33 tbs)
Salt 2 Teaspoon
All purpose flour 6 1/2 Cup (104 tbs)
Cold water 2 Teaspoon
Canned jalapeno pepper 2 Tablespoon , diced
Milk and water 1 Cup (16 tbs) (1:1 ratio, as needed)
Yellow cornmeal 1 Tablespoon (or more to dust on top of buns)

Directions

GETTING READY

1. Preheat oven to 400 degree F.

2. Lightly grease a cookie sheet and set aside.

MAKING

3. In a large mixing bowl, pour 1 ½ cup of warm water and dissolve yeast in it.

4. Add 1 tablespoon of sugar and mix it well. Let the mixture rest for 5 minutes.

5. Pour the remaining 1 ½ cup of warm water in the bowl.

6. Drop canola oil, salt, 3 tablespoons sugar, jalapeno, and 4 cups of flour. Beat until smooth.

7. Gradually add remaining flour and mix until it gets a soft elastic consistency. Transfer the dough to a lightly oiled bowl and cover it with plastic wrap. Let it rest until it doubles in size.

8. On floured work surface, transfer the dough, knead and divide it into balls. Roll and give them the shape of bun.

9. Place buns on the prepared cookie sheet and let it rise.

10. Lightly brush water and milk mixture on them. Sprinkle cornmeal on top. Using scissors, create indentation on the buns as shown in the video.

11. Place cookie sheet in oven and bake for 20-25 minutes or until golden brown.

SERVING

12. Cut bun into half, lay meat patty and tomato slices on it. Serve and enjoy.
