Fruity Hot Cross Buns

These rich and delicious hot-cross buns are perfect started for your day. Delight in this healthy bite!
  Plain flour 1 Pound
  Mixed spice 1 Teaspoon
  Dried fruit 2 Ounce
  Milk 1⁄2 Pint, lukewarm
  Chopped candied peel 2 Ounce
  Butter 2 Ounce
  Salt 1 Pinch
  Cake yeast 1 Tablespoon
  Sugar 2 Ounce

Rub butter into sifted dry ingredients.
Cream yeast and sugar with a little of the milk.
Add the rest of the milk and stir yeast mixture into a well in the centre of the flour.
Mix well and then knead until smooth.
Cover and leave in a warm place until doubled in bulk.
Knead again.
Shape into buns and place on a greased baking sheet.
Mark crosses on top.
Leave to prove for 15 mins.
and bake at 425° F for 15-20 minutes.
As soon as you take them out, brush them with sugar and water glaze: 1 tblspn, sugar mixed with 1 tblspn, water
