Chocolate Zucchini Brownies

This is an amazing dessert. All of the taste of regular brownies but with a very original texture that the zucchini gives it. It is amazing when it is fresh out of the oven but just as good a couple of hours later at room temperature...mmmmmmmmm....You don't need any icing on these, they are perfect on their own...
Ingredients
  Grated zucchini 2 Cup (32 tbs)
  Organic vanilla 2 Teaspoon
  Organic flour 2 Cup (32 tbs)
  Sea salt 1 Teaspoon
  Extra virgin olive oil 1⁄2 Cup (8 tbs)
  Maple syrup 1 1⁄4 Cup (20 tbs)
  Raw cocoa 1⁄4 Cup (4 tbs)
  Organic baking soda 1⁄4 Teaspoon
Directions

Preheat oven to 350 degrees.
1. Combine flour, salt, cocoa and baking soda. In other bowl mix vanilla, oil and maple syrup. Add flour mixture to liquid mixture.
2.Gently, fold in the grated zucchini.(1/2 cup walnuts…optional)
3.Pour into a greased 12X12 inch square baking dish, bake 25-30 min., testing with toothpick. Remove from oven, let cool.

I have so many zucchinis in my organic garden, I just had to find an original recipe that would taste awesome!!! Everyone has a hard time believing that there is actually zucchini in these...so delicious!!
How about a dessert with some green tea in the winter? The this brownie with the zucchini incorporated is the best thing to have! Nutritious and hardly takes 5 minutes to make!
