Angels' Brownies with Fruit
|Sliced fresh fruit||1 Cup (16 tbs)|
|Low fat vanilla yogurt||1 Cup (16 tbs)|
|Flour||3 Ounce (3/4 Cup, 90 Gram)|
|Baking powder||1⁄2 Teaspoon|
|Cocoa powder||1 1⁄2 Cup (24 tbs) (1/2 Cup, 45 Gram)|
|Caster sugar||7 Ounce (1 Cup, 220 Gram)|
|Low fat vanilla yogurt||3 1⁄2 Cup (56 tbs) (1/2 Cup, 100 Gram)|
|Vanilla essence||1 Teaspoon|
|Vegetable oil||1 1⁄2 Tablespoon|
1. To make brownies, sift flour, baking powder and cocoa powder together into a bowl. Add sugar, yogurt, eggs, vanilla essence and oil and mix to combine.
2. Pour batter into a 20 cm / 8 in square cake tin lined with nonstick baking paper and bake at 180°C/350°F/Gas 4 for 25-30 minutes or until brownies are firm.
3. Allow brownies to cool in tin. Cut into squares and serve with fresh fruit and vanilla yogurt.
