Rich chocolate fudge brownies packed with nuts and bits of chocolate. These are perfect for all occasions.
Instant espresso powder | 1 Teaspoon , dissolved in 1 tbsp hot water | |
Hot water | 1 Tablespoon | |
Whole eggs | 2 | |
Cocoa powder | 2/3 Cup (10.67 tbs) | |
Salt | 1/2 Teaspoon | |
Baking powder | 1/2 Teaspoon | |
Vanilla extract | 1 Teaspoon | |
Unsalted butter | 1/2 Cup (8 tbs) | |
Sugar | 1 Cup (16 tbs) (I use demerara but brown or regular works fine) | |
All purpose flour | 3/4 Cup (12 tbs) | |
Chopped chocolate | 200 Gram (a little under 8 oz) | |
Chopped nuts | 1/2 Cup (8 tbs) (walnuts are great, so are peanuts, pecans or almonds) |
GETTING READY:
Preheat oven to 350°F/ 180°C.
Grease baking tray with butter or line with parchment paper.
MAKING:
In a bowl, beat together eggs, espresso mixture, baking powder, salt, vanilla extract and mix well.
Add cocoa powder and mix into a thick paste.
In another bowl, combine butter, sugar and microwave until the mixture melts and blends well.
Add flour and mix well. Fold in chocolate and nuts until evenly distributed.
Pour into prepared pan and pop into oven. Bake for 20-25 minutes and once done allow to cool completely and cut into desired shapes.
