Fish Broth (Rosolzryby)

Ingredients
  Onion 1 Large, quartered
  Butter/Margarine 2 Tablespoon
  Head savoy cabbage 1⁄2 Small
  Carrots 2 , cut up
  Celery stalks 2 , cut up
  Parsley root 1 , cut up
  Water 3 Quart
  Peppercorns 6
  Bay leaf 1
  Salt To Taste
  Fish fillets 2 Pound
  Lemon juice 1 Teaspoon
  Salt 1 Teaspoon
  Nutmeg 1⁄2 Teaspoon
Directions

Brown onion in butter in a small skillet.
Meanwhile, simmer the vegetables in water with peppercorns, bay leaf, and salt to taste 15 minutes.
Add onion and fish to vegetables; simmer about 10 minutes, or until fish flakes easily.
Remove fish and vegetables.
Use for another dish, if desired, or discard.
Strain broth.
Add lemon juice, salt, and nutmeg.
Boil broth rapidly 10 minutes.
Strain again, if desired.
Serve as a clear soup.
