Bone Broth

Ingredients
  Onions 4 , cut
  Celery 1 Cup (16 tbs), cut
  Carrots 1 Cup (16 tbs), cut
  Parsley stems 1⁄2 Cup (8 tbs) (any herb)
  Bay leaf 1
  Dried thyme 1 Teaspoon
  Garlic 2 Clove (10 gm)
  Chicken carcass/Turkey carcass 1
  Reishi mushrooms 1 Small
  Vinegar 1 Teaspoon
  Water 1 Liter
Directions

MAKING
1. In a pot add in celery, onions, carrots, bay leaf, parsley stems, dried thyme, garlic, reishi mushroom, vinegar, chicken carcass and water.
2. Cover the pot and turn the heat low. Simmer for 180 minutes.
3. Let it cool and preserve in the freezer.

SERVING
4. Make chicken soup with broth or use it in your curries.
