Turkey Broth

Ingredients
  Turkey carcass 16 Pound, broken up
  Water 2 Quart
  Onion 1 Large, quartered
  Celery stalks 2 , quartered
  Carrot 1 , quartered
  Salt 1 Tablespoon
  Black peppercorns 8 , crushed in a mortar and pestle
  Bay leaf 1 , crumbled
  Dried thyme 1 Teaspoon
Directions

Put all the ingredients in a large heavy pot, bring to a boil, cover, and simmer for 2 hours.
Strain the broth and use in soups, stews or gravies.
Remove any turkey meat from the bones and add to the broth or use in casseroles.
