|Turkey carcass||16 Pound, broken up|
|Onion||1 Large, quartered|
|Celery stalks||2 , quartered|
|Carrot||1 , quartered|
|Black peppercorns||8 , crushed in a mortar and pestle|
|Bay leaf||1 , crumbled|
|Dried thyme||1 Teaspoon|
Put all the ingredients in a large heavy pot, bring to a boil, cover, and simmer for 2 hours.
Strain the broth and use in soups, stews or gravies.
Remove any turkey meat from the bones and add to the broth or use in casseroles.
