Chicken Steamed In Spiced Broth

  Whole broiler fryer chicken 1 Pound
  Salt 1⁄4 Teaspoon
  Lemon rind 1 , pricked all over with a fork
  Garlic 2 Clove (10 gm), crushed
  Chicken stock/Low-sodium chicken broth 3 Cup (48 tbs)
  Cinnamon stick 1 , split lengthwise
  Ground cumin/Ground coriander 1⁄2 Teaspoon
  Ground cardamom 1⁄8 Teaspoon
  Ground ginger 1⁄8 Teaspoon
  Red pepper 1⁄8 Teaspoon

1 Rub the chicken cavity with the salt.
Place the lemon I and garlic inside the cavity and truss the chicken
2 In a Dutch oven large enough to hold a rack or colan der, bringthe stock, cinnamon stick, cumin, coriander, cardamom, ginger, and red peppertoa boil.
Place a rack in the Dutch oven, set the chicken on top, cover, and simmer over low heat for 1 hour.
Transferthe chicken to a cutting board, remove and discard the skin, and cut into serving pieces.
