Chicken Steamed In Spiced Broth
|Whole broiler fryer chicken||1 Pound|
|Lemon rind||1 , pricked all over with a fork|
|Garlic||2 Clove (10 gm), crushed|
|Chicken stock/Low-sodium chicken broth||3 Cup (48 tbs)|
|Cinnamon stick||1 , split lengthwise|
|Ground cumin/Ground coriander||1⁄2 Teaspoon|
|Ground cardamom||1⁄8 Teaspoon|
|Ground ginger||1⁄8 Teaspoon|
|Red pepper||1⁄8 Teaspoon|
1 Rub the chicken cavity with the salt.
Place the lemon I and garlic inside the cavity and truss the chicken
2 In a Dutch oven large enough to hold a rack or colan der, bringthe stock, cinnamon stick, cumin, coriander, cardamom, ginger, and red peppertoa boil.
Place a rack in the Dutch oven, set the chicken on top, cover, and simmer over low heat for 1 hour.
Transferthe chicken to a cutting board, remove and discard the skin, and cut into serving pieces.
