Meat Broth

Ingredients
  Bones and meat scraps from beef 3 1⁄2 Pound
  Parsley 1⁄2 Cup (8 tbs) (Loosely Packed)
  Carrots 2 , chopped
  Celery stalks 2 , chopped
  Onion 1 Medium, sliced
  Tomatoes 2 Medium, chopped
  Water 4 Quart
  Salt 1 Tablespoon
Directions

Place all ingredients except salt in a large stockpot.
Cover and bring to a boil.
Reduce heat to very low.
Simmer covered 2-1/2 to 3 hours, skimming surface foam occasionally with a slotted spoon.
Add salt.
Strain broth and use.
Cool broth completely before freezing.
