|Broccoli stems||1 Pound (6 To 8)|
1) Using a knife or food processor, slice the broccoli stems into very thin rounds. You will get about 4 cups of broccoli slices. Note that each slice will have a star pattern on it, hence the name, Broccoli Stars.
2) Over rapidly boiling water, steam the slices for 3 or 4 minutes, or until they turn crisp tender.
3) Remove them from heat and quickly rinse under cold running water. This will stop the cooking and help in preserving the color of broccoli.
4) Drain well.
5) Use this in salads or soups, as required.
