|Broccoli||2 Pound (4 To 6 Stalks)|
1) From the stalks, gently remove each broccoli floweret. (You can reserve stalks for preparing other dishes, later.)
2) Over rapidly boiling water, steam the flowerets for 5 to 8 minutes, or until they turn crisp tender.
3) Remove from heat.
4) Quickly place under cold running water. This will stop the cooking and help preserve the color of the vegetable.
5) Drain well.
6) Chill the flowerets if you are using them for appetizers or in any salad. To serve hot, you can reheat them immediately. You can also chill them, reheat and serve later.
When reheating vegetables cooked in this manner, you should be careful to not overcook them. The crispness and the color of the vegetable may be destroyed if overcooked.
