Orange Buttered Broccoli
|Sweet red pepper||1⁄2 Medium, cut into strips|
|Sweet red pepper/Sweet yellow pepper||1⁄2 Medium, cut into julienne strips|
|Juice concentrate||1 Tablespoon, frozen (1 Can)|
|Frozen orange juice concentrate||1 Tablespoon|
|Oranges||2 Medium, sliced|
|Toasted slivered almonds||2 Teaspoon, toasted|
|Sesame seed/2 tablespoons slivered almonds, toasted||2 Teaspoon, toasted|
1 Cut the broccoli stalks lengthwise into uniform spears.
2 In an 8x8x2-inch baking dish combine the broccoli, red or yellow pepper, and water.Cover with a vented clear plastic wrap.
3 Cook on 100% power (high) for 6 to 8 minutes or till the broccoli is crisp-tender, rearranging the broccoli mixture once. Let stand, covered, while preparing the orange butter.
4 For the orange butter, in a 1-cup measure cook the butter or margarine and orange juice concentrate, uncovered, on high for 50 to 60 seconds or till the butter is melted.
5 Drain the broccoli mixture. Arrange the orange slices and broccoli mixture on a serving platter.Drizzle orange butter over the broccoli mixture.
6 Sprinkle with sesame seed or almonds before serving.
