Broccoli Hollandaise

Ingredients
  Fresh broccoli/Two 10-oz pkgs frozen 1 1⁄2 Pound
  Egg yolks 2 , slightly beaten
  Lemon juice/White wine 2 Tablespoon
  Soft margarine 1⁄4 Cup (4 tbs)
  Mayonnaise 1⁄2 Cup (8 tbs)
  Egg whites 2 , stiffly beaten
  Grated parmesan cheese 2 Tablespoon
Directions

Simmer broccoli until tender or cook according to package directions.
Spread drained vegetable in a greased 9 X 6-inch shallow baking dish and keep hot.
Combine beaten egg yolks, lemon juice and margarine in a small saucepan and cook over low heat until slightly thickened, stirring constantly.
Remove from heat and stir in mayonnaise, and then fold in to the beaten egg whites.
Spoon over the broccoli and sprinkle with cheese.
Broil for a few minutes until delicately browned.

Got this recipe out of Chatelaine cookbook in 1968. The one recipe my now middle aged children still keep asking for, and I make it regularly. I use microwave to melt the butter/egg/lemon juice mixture, but carefully, seconds at a time, since it is easy to overcook. Saves on dishes!
