|Fresh broccoli/Two 10-oz pkgs frozen||1 1⁄2 Pound|
|Egg yolks||2 , slightly beaten|
|Lemon juice/White wine||2 Tablespoon|
|Soft margarine||1⁄4 Cup (4 tbs)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Egg whites||2 , stiffly beaten|
|Grated parmesan cheese||2 Tablespoon|
Simmer broccoli until tender or cook according to package directions.
Spread drained vegetable in a greased 9 X 6-inch shallow baking dish and keep hot.
Combine beaten egg yolks, lemon juice and margarine in a small saucepan and cook over low heat until slightly thickened, stirring constantly.
Remove from heat and stir in mayonnaise, and then fold in to the beaten egg whites.
Spoon over the broccoli and sprinkle with cheese.
Broil for a few minutes until delicately browned.
