Quick Broccoli Vinaigrette
|Broccoli||1 1⁄2 Pound (fresh)|
|Balsamic vinegar||2 Tablespoon|
|Dijon mustard||1 Teaspoon|
|Olive oil||1⁄2 Teaspoon|
Trim off large leaves of broccoli, and remove tough ends of lower stalks.
Wash broccoli; cut into spears.
Arrange in a vegetable steamer over boiling water.
Cover; steam 5 minutes or until crisp-tender.
Drain; transfer to a serving platter, and keep warm.
Combine vinegar and remaining ingredients, stirring well with a wire whisk.
Drizzle vinegar mixture over broccoli, and serve immediately.
