Orange Sauced Broccoli & Peppers
|Broccoli flowerets||3 1⁄2 Cup (56 tbs)|
|Sweet pepper||1 Medium, cut into 1-inch pieces (Red Or Yellow)|
|Finely chopped onion||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Cornstarch||1 1⁄2 Teaspoon|
|Orange juice||2⁄3 Cup (10.67 tbs)|
|Dijon mustard||2 Teaspoon|
1 In a medium saucepan cook broccoli and sweet pepper in a small amount of lightly salted boiling water about 8 minutes or until broccoli is crisp-tender. Drain; keep warm.
2 Meanwhile, for sauce, in a small saucepan cook onion and garlic in hot margarine or butter until onion is tender. Stir in cornstarch. Add orange juice and mustard. Cook and stir until mixture is thickened and bubbly. Cook and stir 2 minutes more. Toss sauce with broccoli-pepper mixture.
