This Broccoli Coulis is a delicious sauce that makes a perfect mate for poached egg Napoleon. Try this Broccoli Coulis and tell me if you like it.
  Butter 1 Tablespoon (15 ml)
  Broccoli 375 Milliliter, cut into pieces (1 1/2 cups, mainly stems)
  Green onions 2 , chopped
  Garlic 1 Clove (5 gm), finely sliced
  Potatoes 60 Milliliter, diced (1/4 cup)
  Chicken stock 250 Milliliter (1 cup)
  Tarragon 2 Milliliter, chopped (1/2 teaspoon)
  Salt To Taste
  Pepper To Taste

–  In a saucepan, melt butter and saute broccoli, green onions, garlic and potatoes without browning. Pour chicken stock into mixture and season with salt, pepper and tarragon. Simmer tor 20 minutes.
–  Run mixture through blender, then return to saucepan and cook for 5 minutes.
–  Adjust seasoning, then pour through sieve and serve.
