Broccoli With Black Olives
|Fresh broccoli||1 Bunch (100 gm), trimmed|
|Olive oil||3 Tablespoon|
|Garlic||1 Clove (5 gm), chopped fine|
|Freshly ground black pepper||To Taste|
|Black olives||1⁄4 Cup (4 tbs), pitted and cut into small pieces (Use Small Variety)|
|Grated parmesan cheese||3 Tablespoon|
1. Parboil the broccoli about ten minutes in a small amount of salted water. Drain.
2. Heat the oil, add the garlic and saute until lightly browned. Add the broccoli and season with salt and pepper. Cook slowly over low heat ten minutes, adding a little of the water in which the broccoli was cooked if the pan gets too dry.
3. Add the olives and heat two minutes longer.
