Braised Brisket Of Beef With Cucumber And Tomatoes

Ingredients
  Sliced beef brisket 1 Pound
  Chopped onions 2
  Tomatoes 8 Ounce
  Gherkins 5
  Cucumber 1 Large
  Tomato sauce 1⁄2 Cup (8 tbs)
  Paprika 1 Teaspoon
  Fat/Dripping 1 Tablespoon
  Melted butter 1 Tablespoon
  Flour 1 Tablespoon
Directions

Brown the pieces of meat with the sliced onions in a little fat or dripping, then cover the pan, adding a very little water from time to time.
After braising the meat like this for 1 hour, add the tomatoes, skinned and cut up, salt, pepper, a teaspoonful of paprika, and the gherkins, fairly thickly sliced: and simmer for another hour.
Blanch a large, peeled fresh cucumber in boiling water for a few minutes then slice it.
Arrange alternate layers of meat and cucumber on a dish, cover with thick tomato sauce bound with a little melted butter mixed with an equal quantity of flour, and brown in the oven.
