This recipe can be made with any left over beef that you have. I used some left over braised beef brisket and the results were quite good! You will love the how easy this is to make. And the price! Absolutely great! Here is what you are going to need for this:
1 Medium, chopped
1 , seeded and chopped
4 Clove (20 gm), minced
Canned diced tomatoes
28 Ounce (1 Can)
Canned kidney beans
56 Ounce (2 Cans, 28 Ounce Each)
Shredded cooked beef
3 Cup (48 tbs) (Use Leftover Brisket If You Have Any)
Heat a large pot with some olive oil.
Add the onion, garlic and jalapeno. Cook for about 8 minutes until onion and jalapeno are softened. Add the spices and mix until fragrant (chili powder, cumin, oregano).
Add tomatoes with their juice, beans with their liquid and beef. Bring pot to a boil, reduce heat and simmer – covered – for an hour.\
Serve in bowls with sour cream and corn bread.
