Parmesan Quick Bread
|Biscuit mix||3 Cup (48 tbs)|
|Yellow cornmeal||3⁄4 Cup (12 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Shredded parmesan cheese||3⁄4 Cup (12 tbs)|
|Buttermilk||1 1⁄4 Cup (20 tbs)|
|Eggs||2 , beaten|
Combine biscuit mix, cornmeal, sugar, and cheese in a large bowl.
Mix buttermilk and eggs; add to dry ingredients and stir only until blended.
Turn into a buttered 9x5x3-inch loaf pan; spread evenly to edges.
Bake at 350°F 40 to 50 minutes, or until bread tests done.
Remove from pan set on a wire rack to cool completely.
