Whole Wheat Banana Walnut Bread
|Sweet butter||8 Tablespoon (1 Stick, At Room Temperature)|
|Granulated sugar||3⁄4 Cup (12 tbs)|
|Unbleached all purpose flour||1 Cup (16 tbs)|
|Baking soda||1 Teaspoon|
|Whole wheat flour||1 Cup (16 tbs)|
|Ripe bananas||3 Large, mashed|
|Vanilla extract||1 Teaspoon|
|Shelled walnuts||1⁄2 Cup (8 tbs), coarsely chopped|
Preheat oven to 350°F.
Grease a 9 x 5 x 3 inch bread pan.
Cream butter and sugar until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Sift all-purpose flour, baking soda and salt together, stir in whole wheat flour and add to creamed mixture, mixing well.
Fold in mashed bananas, vanilla and walnuts.
Pour mixture into the prepared pan.
Bake for 50 to 60 minutes, or until a cake tester inserted in the center comes out clean.
Cool in pan for 10 minutes, then on rack.
