Eggless Date And Nut Bread
|Boiling water||1 1⁄4 Cup (20 tbs)|
|Dates||2 Cup (32 tbs), chopped|
|Packed brown sugar||3⁄4 Cup (12 tbs)|
|Nuts||3⁄4 Cup (12 tbs), chopped|
|Self raising flour||2 Cup (32 tbs)|
Pour boiling water over the dates in a large bowl and add margarine.
Let cool to lukewarm, then stir in the next three ingredients.
Sift flour, soda and cinnamon together and add to the date mixture.
Blend well and scrape into a greased loaf pan.
Bake at 375F (190C) for 45 to 55 minutes or until centre is set.
Cool and remove from the pan.
When cold, wrap and let stand 24 hours before slicing.
