Garlic Cheese Bread
|Active dry yeast||1⁄4 Ounce (1 Package)|
|Warm water||1 Cup (16 tbs)|
|Olive oil||1⁄2 Cup (8 tbs)|
|Unbleached all purpose flour||3 Cup (48 tbs)|
|Garlic||4 Clove (20 gm), minced (Large Cloves)|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
In a large bowl, dissolve yeast in water and let stand until bubbly .
Stir in sugar, salt, and 1/4 cup of the oil.
Add 2 cups of the flour, and, with a wooden spoon or heavy duty electric mixer at medium speed, beat until batter is elastic and pulls away from sides of bowl .
Stir in about 2/3 cups more flour to make a soft dough.
Turn dough out onto a floured board and knead until nonsticky, smooth, and satiny .
Place in a greased bowl; turn over to grease top.
Cover and let rise in a warm place (80Â°) until doubled Heat remaining 14 cup oil in a small pan over low heat; add garlic and cook, stirring occasionally, until soft and yellow (about 15 minutes).
Punch down dough and knead briefly on a floured board just to release air bubbles.
Roll dough with a rolling pin, then stretch it with your hands to fit bottom of a well greased 10 by 15 inch rimmed baking sheet.
Place dough in pan.
With your fingers or tip of a spoon, pierce dough at 1 inch intervals.
Drizzle garlic and oil mixture evenly over dough, then sprinkle with cheese.
Let rise in a warm place (80Â°), uncovered, until dough is puffy.
Bake in a 400Â° oven for 15 to 18 minutes or until golden brown.
Cut into 16 equal pieces and serve warm or at room temperature.
