Zucchini Walnut Bread
|Walnuts||1 Cup (16 tbs), cut in pieces|
|Sugar||2 Cup (32 tbs)|
|Oil||1 Cup (16 tbs)|
|Unsifted flour||3 1⁄2 Cup (56 tbs)|
|Baking soda||1 1⁄2 Tablespoon|
|Salt||1 1⁄2 Tablespoon|
|Baking powder||3⁄4 Tablespoon|
|Grated zucchini||2 Cup (32 tbs) (Not Pared)|
|Raisins||1 Cup (16 tbs)|
Beat eggs gradually adding sugar.
Add oil, combine dry ingredients and add to mixture, alternating with zucchini.
Stir in raisins, walnuts and vanilla.
Turn into 2 greased and lightly floured loaf pans, 9" x 5" x 2 3/4".
Bake at 350 F for about 55 minutes.
Let stand 10 minutes, then place on wire racks to cool.
