Sweet Brown Bread
|Brown sugar||4 Tablespoon|
|Boiling water||3 Cup (48 tbs)|
|Milk||1 Cup (16 tbs)|
|Lukewarm water||1⁄2 Cup (8 tbs)|
|Dry yeast||2 Tablespoon (About 2 Envelopes)|
|Graham flour||1 1⁄2 Pound (About 5 2/3 Cups)|
|All purpose flour||2 1⁄2 Pound, sifted (About 10 Cups)|
Measure brown sugar, molasses, salt and shortening into a bowl.
Add boiling water and milk.
To 1/2 cup of lukewarm water add 1 teaspoon sugar and yeast.
When yeast has risen stir well and add to first mixture.
Stir in graham flour and mix well, then gradually add bread flour until dough sticks together enough to be handled.
Knead on a floured board until smooth and elastic.
It takes from 10 to 25 minutes for the right consistency.
Place in a greased bowl and cover.
Let rise for about 2 hours.
Then divide dough into 6 parts and knead and shape into loaves.
Place in greased loaf tins and let rise until doubled in size.
Bake at 425F for about 30 to 40 minutes.
