Sweitzer Bread

Ingredients
  Warm water 6 Cup (96 tbs)
  Salt 4 Teaspoon
  Maple syrup/Honey / molasses 4 Tablespoon
  Instant dry yeast 2 Tablespoon
  Bran 1 Cup (16 tbs)
  Rolled oats 1⁄2 Cup (8 tbs)
  Rye flour 2 Cup (32 tbs)
  Whole wheat flour 5 Cup (80 tbs)
  All purpose flour 5 Cup (80 tbs)
Directions

Combine water, salt, maple syrup and yeast in large bowl.
Stir in remaining ingredients.
(Add flours slowly.) When thoroughly mixed, cover and let rise for 1 hour.
Punch down dough.
Divide into 3.
Grease 3 bread pans and sprinkle with sesame seeds.
Shape loaves and place into pans.
Let rise 20 minutes.
Bake at 400°F for 30 to 45 minutes.
