Cinnamon Bread Roll-Ups

Ingredients
  Soft white sandwich bread 48 Ounce, crusts trimmed (2 Loaves Of 24 Ounce Each)
  Cream cheese 16 Ounce (Room Temperature)
  Sugar 2 Cup (32 tbs)
  Egg yolk 1
  Vanilla extract 1 Teaspoon
  Cinnamon To Taste
  Butter 1 Cup (16 tbs), melted (2 Sticks)
Directions

Roll bread slices flat with a rolling pin.
Combine the cream cheese, 1/2 cup of the sugar, egg yolk and vanilla in a mixing bowl and beat until smooth.
Mix together the remaining 1 1/2 cups sugar and cinnamon in a small bowl.
Place a teaspoon of the cream cheese mixture in the center of a bread slice and roll tightly from one corner to the opposite corner.
Dip the rolled bread in melted butter, then roll in the cinnamon mixture.
Place the roll up on a nonstick cookie sheet.
Repeat procedure until all bread slices have been used.
Freeze the roll ups, covered, for at least 20 minutes or up to a week.
Bake at 350 degrees for 8 to 10 minutes or until hot and bubbly.
