Steamed Buttermilk Brown Bread
|Cornmeal||1⁄2 Cup (8 tbs)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Whole wheat flour||1⁄2 Cup (8 tbs)|
|Baking soda||3⁄4 Teaspoon|
|Raisins||1⁄2 Cup (8 tbs)|
|Buttermilk||1 Cup (16 tbs)|
|Molasses||1⁄4 Cup (4 tbs)|
Combine first 6 ingredients in a medium mixing bowl, stir in raisins.
Combine buttermilk and molasses in a small mixing bowl, add to dry ingredients, stirring well.
Spoon mixture into a well-greased 4-cup mold, cover tightly with aluminum foil.
Place mold on a shallow rack in a large deep kettle with enough boiling water to come halfway up sides of mold.
Steam bread 2 hours in continuously boiling water. (Add water as needed.)
Unmold bread onto wire rack to cool.
