|Flour||5 Cup (80 tbs)|
|Water||1 1⁄2 Cup (24 tbs)|
|Sugar||1 1⁄4 Cup (20 tbs)|
|Oil||1⁄4 Cup (4 tbs)|
|Tahina||2 1⁄4 Cup (36 tbs)|
|Sugar||1 Cup (16 tbs)|
Place the flour in a bowl.
Add the water, yeast, sugar and salt.
Knead for about ten minutes until you have a smooth dough.
Form into a ball.
Roll out on a lightly floured surface until the dough is as thin as possible.
In a separate bowl mix together the olive oil, tahine, sugar and cinnamon until it is pasty, spread the mixture on the circle of dough.
Make a hole in the center of the circle.
Carefully roll the dough back from the center all around the edges, bringing from the center and out to the circumference.
With your fingers press gently all along the rolled sausage-like dough.
Do not press too much.
Cut the rolled dough into 13 pieces.
Roll each one round on the floured surface.
Turn the other side and roll again.
Place the four or five flat thin rounds onto a baking sheet.
Let it rise a little while you preheat the oven.
Bake at 450 degrees until golden brown.
If you like you can brush the bread surface with beaten egg.
Tahin bread is delicious with tea or coffee for breakfast.
