|Firmly packed brown sugar||1⁄4 Cup (4 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Orange rind||2 Teaspoon|
|Unsweetened orange juice||1⁄2 Cup (8 tbs)|
|Canned unsweetened crushed pineapple||8 Ounce|
Combine first 5 ingredients, and set aside.
Combine brown sugar, oil, and egg, mix well.
Stir in orange rind, juice, and pineapple.
Stir in dry ingredients, blending until smooth.
Spoon batter into an 8 1/2 x 41/2 x 3-inch loafpan coated with cooking spray.
Bake at 350Â° for 1 hour or until a wooden pick inserted in center comes out clean.
