|Flour||4 Cup (64 tbs)|
|Water||1 Cup (16 tbs)|
|Ghee||1⁄2 Cup (8 tbs)|
1)In a mixing bowl, add flour with rest of the ingredients and knead into stiff dough, adding water as needed.
2)Cover it with damp cloth and leave it for 20 minutes.
3)Keep aside some dry flour for dredging.
4)Take a griddle and heat it.
5)Divide it into 8 portions and roll each one into short fat disc. Use dry flour if needed.
6)Take one disc, spread a little ghee on the surface, roll it up into a ball and then roll it out into a disc of preferred size.
7)Repeat the process with remaining balls. Cover roti’s with damp cloth.
8) Place the rotis one at a time on griddle.
9)Before it is fully cooked place it in tandoor or clay oven, toaster or griller and cook.
10)Butter the rotis and serve with dal or curry.
