Betty's Lemon Tea Bread -- Thanksgiving

In this video, Betty demonstrates how to make Lemon Tea Bread. This is an excellent recipe to make for a holiday brunch or afternoon tea.

Ingredients

Wet ingredients
Butter 1/2 Cup (8 tbs) , softened
Sugar 1 Cup (16 tbs)
Eggs 2 , well beaten
Milk 1/2 Cup (8 tbs)
Lemon extract 1 Teaspoon
Dry ingredients
All purpose flour 1 1/2 Cup (24 tbs)
Baking powder 1 Teaspoon
Salt 1/2 Teaspoon
For glaze
Confectioners sugar 1 Cup (16 tbs)
Lemon juice 2 Tablespoon

Directions

GETTING READY

1. Preheat oven to 350 degree F.

2. Butter and flour a loaf pan and set aside.

MAKING

3. In a large mixing bowl, beat butter until creamy using medium speed of a mixer. Add sugar and beat until light and fluffy.

4. Add eggs into the bowl, one at a time and beat well after each addition.

5. In a small bowl, combine flour, baking powder, and salt.

6. Add the dry mixture into the butter mixture, alternately with milk, beating well after each addition, and beginning and ending with the flour mixture.

7. Stir in lemon extract and pour batter into prepared loaf pan.

8. Pop the pan in oven and bake for about 45 minutes or until a cake tester when inserted into the deepest part comes out clean.

9. Remove from oven and let the cake cool in pan on wire rack for 10 minutes. Remove from pan and cool completely on wire rack for about 1 hour.

For Glaze:

10. In a small bowl, stir together confectioner's sugar and lemon juice until smooth.

FINALIZING

11. Drizzle glaze over the top of bread. Let rest for a couple of minutes or until set.

SERVING

12. Cut into slices and serve!
