Apple Or Zucchini Bread

  Eggs 3
  Oil 1 Cup (16 tbs)
  Sugar 1 Cup (16 tbs)
  Molasses 1⁄3 Cup (5.33 tbs)
  Vanilla 2 Teaspoon
  Flour 2 Cup (32 tbs)
  Whole wheat flour 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Baking soda 1 Teaspoon
  Baking powder 1⁄2 Teaspoon
  Cinnamon 2 Teaspoon
  Zucchini 2 Cup (32 tbs), shredded (or 2 cups shredded apple)
  Nuts 1 Cup (16 tbs), chopped

Beat eggs. Add oil, sugar, molasses, and vanilla; beat mixture until thick and foamy. Combine flours, salt, soda, baking powder, and cinnamon, and add to egg mixture. Stir just until blended. Add apples and nuts. Combine well. Divide batter between greased and floured loaf pans. Bake for 1 hour or until bread tests done, or use three smaller pans and bake for 45 minutes. Leave bread in the pan for about 10 minutes to cool-then turn out on rack and cool thoroughly.
