Healthier Banana Bread

Make fresh banana bread batter in seconds with your high powered Blendtec or Vitamix blender! Better and faster than grandma used to make. ) Blender Babes adapted a popular recipe and made it healthier by using coconut oil, white whole wheat flour, and a healthier sugar option than white. Another trick of ours, we kept our banana bread moist by using yogurt.

Ingredients

The wet ingredients
Organic eggs 2 Medium
Virgin coconut oil 1/4 Cup (4 tbs)
Low fat vanilla yogurt 1/2 Cup (8 tbs)
Vanilla extract 1/2 Teaspoon
Banana 2 Large
The dry ingredients
Wheat flour for bread 1 1/2 Cup (24 tbs)
Sugar 1/4 Cup (4 tbs)
Baking soda 1 Teaspoon
Salt 1 Teaspoon
Chopped walnuts/Chopped pecans 3/4 Cup (12 tbs)

Directions

FOR THE BLENDTEC BANANA BREAD

GETTING READY

1. Preheat the oven to 350 degrees.

MAKING

2. In the blendtec, combine organic eggs, virgin coconut oil, low fat vanilla yogurt and banana.

3. Press the batter button and blend to a smooth batter consistency.

4. Once done, add wheat flour, sugar, baking soda, salt and chopped walnuts.

5. Continue to blend using the pulse button 1-3 times.

6. Pour the batter into the greased bread pan. Bake in the preheated oven for 40-50 minutes.

7. Check if the bread is done using a toothpick, if it comes out clean then the bread is done.

SERVING

8. Serve with a hot cup of coffee.

FOR THE VITAMIX BANANA BREAD

GETTING READY

1. Preheat the oven to 350 degrees.

2. Prepare a greased bread pan.

MAKING

3. In the vitamix combine organic eggs, virgin coconut oil, low fat vanilla yogurt and banana.

4. Start off with speed 1 and slowly increase to speed 4, blend to a smooth batter consistency.

5. In a mixing bowl combine wheat flour, sugar, baking soda, salt and chopped walnuts.

6. Pour the batter and stir everything, using a spatula until well combined.

7. Pour the batter into a greased bread pan. Bake in the preheated oven for 40-50 minutes.

8. Check if the bread is done using a toothpick, if it comes out clean then the bread is done.

SERVING

9. Slice and serve with a hot cup of coffee.
