Blueberry Orange Nut Bread
|Orange rind||1 Tablespoon, grated|
|Orange juice||2⁄3 Cup (10.67 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Butter||1⁄2 Cup (8 tbs), melted|
|All purpose flour||3 Cup (48 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Baking powder||1 Tablespoon|
|Baking soda||1⁄4 Teaspoon|
|Fresh blueberries||1 Cup (16 tbs)|
|Walnuts||1⁄2 Cup (8 tbs), chopped|
Combine first 5 ingredients; beat at medium speed of electric mixer 30 seconds.
Combine flour, sugar, baking powder, soda, and salt in a large bowl; make a well in center of mixture.
Add egg mixture, stirring just until moistened.
Fold in blueberries and walnuts.
Pour batter into a greased and floured 9- x 5- x 3-inch loaf pan; bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean.
Cool in pan 10 minutes; remove from pan, and cool completely.
