|Salad oil||3 Tablespoon|
|Boiling water||2 Cup (32 tbs)|
|Unsifted all purpose flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Sugar||1 Cup (16 tbs)|
|Raw cranberries||1 Cup (16 tbs)|
|Chopped walnuts||2⁄3 Cup (10.67 tbs)|
Pour orange juice into a measuring cup, and add grated rind, oil and enough boiling water to make 3/4 cup.
Sift dry ingredients into a bowl, and make a well in the center.
Pour in the liquids and beaten egg.
Stir until blended.
Fold in cranberries and nuts.
Bake in a greased 9" x 5" x 3" loaf pan at 325°F from 60 to 70 minutes or until center is set.
Cool in the pan.
Store 24 hours before slicing.
