Preheat oven to 400 degrees.
Cream sugar and butter until fluffy; add eggs, one at a time, beating well after each addition.
Add lemon extract.
Sift flour, baking powder and salt together; add to egg mixture, stirring until blended.
Add pecans, raisins and lemon peel; pour into greased loaf pan.
Bake for 10 min- utes.
Lower temperature to 350 degrees.
Bake for 1 hour longer.
