Raisin-Black Walnut Bread
|Raisins||2 Cup (32 tbs)|
|Soda||2 1⁄2 Teaspoon|
|Chopped black walnuts||1 Cup (16 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Vanilla||1 1⁄2 Teaspoon|
|Sifted flour||4 Cup (64 tbs)|
Mix raisins, 2 1/2 cups hot water and soda; let stand overnight.
Beat eggs slightly; add sugar and short- ening.
Drain raisins; reserve liquid.
Sift flour and salt; add to egg mixture alternately with reserved raisin liquid.
Add raisins, walnuts and va- nilla.
Place in 5 greased 1-pound coffee cans.
Bake at 325 degrees for 1 hour.
