Zucchini Bread

Ingredients
  Unbleached flour 2 Tablespoon
  Whole wheat flour 1 Tablespoon
  Zucchini 1 Cup (16 tbs), grated and pressed to remove liquid
  Baking powder 1⁄2 Teaspoon
  Seasoned salt 1⁄4 Teaspoon
  Sugar substitute 1 Teaspoon (1 Packet)
  Eggs 2 , separated
  Ricotta cheese 2 Tablespoon
  Parmesan cheese 2 Tablespoon, grated
  Cream of tartar 1⁄8 Tablespoon
  Walnuts 10
Directions

GETTING READY
1.Preheat oven to 350° F.

MAKING
2.In a bowl mix salt, baking powder, zucchini, sugar substitute and flour.
3. Beat the egg yolks one by one.
4. Add the cheeses in the mixture.
5. Beat cream of tartar and egg whites till they become stiff.
6. Spoon the ingredients in a small loaf pan.
7. Arrange the walnut halves on the top neatly.
8. Bake for 50 minutes.

FINALIZING
9. Remove the pan and let it cool on a rack.

SERVE
10. Serve zucchini bread with pickled fish.
