Sweet Lemon Bread
|Butter/Margarine||1⁄2 Cup (8 tbs), softened|
|Sugar||1 Cup (16 tbs)|
|Sifted all purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 Teaspoon|
|Milk||1⁄2 Cup (8 tbs)|
|Lemon||1 , juiced and grated rind|
Cream butter and sugar.
Beat in eggs.
Sift dry ingredients together and add to batter alternately with milk.
Stir in lemon juice and rind.
Bake in greased 9 x 5 x 3-inch loaf pan in preheated slow oven (300°F.) about 1 hour and 10 minutes.
Remove to rack.
If desired, pierce loaf top with cake tester in a number of places and pour over glaze made by mixing juice of 1 lemon and 1/2 cup sugar.
Slice thin and serve at room temperature or cooled.
