Arabian Pocket Bread

Ingredients
  Fast rising active dry yeast package 1
  Warm water 1 1⁄4 Cup (20 tbs)
  Granulated sugar 1⁄2 Teaspoon
  All purpose flour 4 1⁄2 Cup (72 tbs)
  Vegetable oil 2 Tablespoon
  Salt 1 Teaspoon
Directions

GETTING READY
1. Preheat oven to 450°F
2. In a large bowl, spray a coat of nonstick cooking spray and set aside

MAKING
3. In a large bowl, sprinkle yeast over the water; add sugar to it and stir around
4. Let this mixture stand for five minutes till foamy and then add a cup of flour, the oil and slt into it
5. With an electruic misture, beat this mixture for a couple of minutes till well combined; add about two tablespoons of flour and mix well
6. Sprinkle a work surface with the remaining dough and knead until smooth and elastic for say five minutes
7. Make a ball of the dough, add to a sprayed bowl, cover with cling film and let stand in a warm place to double in volume for an hour
8. When sufficiently risen, remove from the bowl, punch it down adn cut into sixteen pieces, shaping each into a ball
9. Roll each ball into a circle with a rolling pin, place on a nonstick baking dish and bake for five to seven minutes
10. remove ontoa wire rack and cool for five minutes

SERVING
11. Serve/Use as appropriate
