Country Brunch Casserole
|Onion||1⁄2 Cup (8 tbs), chopped|
|Bread stuffing cubes||3 Cup (48 tbs)|
|Bread cubes||3 Cup (48 tbs)|
|Canadian bacon||1⁄2 Pound, thinly sliced|
|Canadian bacon||1⁄3 Pound, thinly sliced, cut into bite-size pieces|
|Sharp low fat cheddar cheese||4 Ounce, shredded|
|Reduced fat sharp cheddar cheese||4 Ounce, shredded (1 Cup)|
|Dry mustard||1⁄2 Teaspoon|
|Onion salt||1⁄2 Teaspoon|
|Skim milk||2 Cup (32 tbs)|
1.Stirring occassionally, microwave onion and water for 2 minutes on HIGH.
2. At the bottom of a 12x8x2 inch baking pan coated with cooking spray, place the stuffing cubes.
3.Scatter ham , cheese and onion.
4. In a bowl, combine eggs, seasonings and milk.
5. Pour this over stuffing mixture in pan.
6.Refrigerate covered overnight.
7.Bake for 1 hour at 325 degrees F uncovered.
8.Allow to cool for 10 minutes.
9. Serve directly scooped from dish onto serving plates.
