Orange Cranberry Bread
|Sugar||1 Cup (16 tbs)|
|Flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Nuts||1⁄2 Cup (8 tbs), chopped|
|Orange rind||2 Teaspoon, grated|
|Orange juice||3⁄4 Cup (12 tbs)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Cranberries||1 1⁄2 Cup (24 tbs), chopped|
Combine first 7 ingredients, mix well and set aside.
Combine eggs, orange juice & mayonnaise in small bowl, mix thoroughly.
Stir this mix into the flour mixture until flour is well moistened.
Fold in cranberries; pour into greased loaf pan.
Bake at 350 degrees for 65-70 minutes.
