Crunchy Herbed Halibut

This is one of the simplest, most flavorful fish dishes ever. Try it with whatever herbs are in season and plentiful. When buying halibut, wild Alaskan halibut is the best choice. The halibut is shown here with Wilted Greens. More info can be found at foodell.com
Ingredients
  Unsalted butter 1 Ounce (At Room Temperature, 2 Tablespoon)
  Panko bread crumbs/Flavored bread crumbs 1 Cup (16 tbs)
  Finely chopped fresh herbs 2 Tablespoon (Such As Basil, Parsley And/Or Thyme)
  Halibut fillets 4 , skin removed
Directions

1. Preheat the oven to 400F.

2. Combine the softened butter, Panko and chopped herbs with 1/4 teaspoon salt in a small bowl.

3. Season both sides of each halibut fillet with salt and pepper and place them skin-side down on a baking tray lined with aluminum foil.

4. Top each fillet with 1/4 of the bread crumb mixture. Bake the fillets for 12 to 15 minutes or until the fillets have lost their translucence and are white, and the bread crumbs are golden brown. Serve hot.
