Banana Rum Bread

Ingredients
  Wholemeal flour 1⁄2 Pound (225 Gram)
  Bicarbonate of soda 1⁄2 Ounce (15 Gram)
  Baking powder 1⁄2 Ounce (15 Gram)
  Sea salt 1 Teaspoon
  Lemon 1 , juiced and grated rind
  Peanut oil 3 Fluid Ounce (75 Ml)
  Eggs 2 , beaten
  Ripe bananas 2 Large, flesh mashed
  Clear honey 2 Fluid Ounce (50 Ml)
  Chopped pitted dates 4 Ounce (100 Gram)
  Ground peanuts 2 Ounce, roasted (50 Gram)
  Desiccated coconut 1 Ounce, slightly toasted (If Liked, 25 Gram)
  Black rum 2 Tablespoon (French Negrita)
  Vegetable fat 1 Ounce (25 Gram, Hard)
Directions

GETTING READY
1) Preheat oven 325°F/170°C (Gas Mark 3).

MAKING
2) In a large bowl mix first four ingredients.
3) Add the next five ingredients and beat together to creamy consistency.
4) Add flour mixture and blend thoroughly.
5) Add chopped dried fruit and nuts. Pour rum and mix.
5) Grease two 1 pound (500 g) loaf tins with vegetable fat.
6) Pour the loaf batter into it.
7) Bake at oven for 1 hour on the middle shelf.
8) Place onto a wire rack to cool.

SERVING
9) Serve warm.
