Prune Banana Bread

Ingredients
  Margarine 1⁄3 Cup (5.33 tbs)
  Sugar 1 Cup (16 tbs)
  Egg substitute/4 egg whites 1⁄2 Cup (8 tbs)
  Mashed bananas 1 Cup (16 tbs)
  All purpose flour 2⁄3 Cup (10.67 tbs)
  Oat bran 1⁄3 Cup (5.33 tbs)
  Baking soda 1 Teaspoon
  Vanilla extract 1 Teaspoon
  Chopped pitted prunes 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1.Preheat the oven to 350 F.
2.Oil a 9 x 5 inch loaf pan and keep aside.

MAKING
3.Blend margarine and sugar in a mixer.
4.Add egg substitute or egg white and mashed bananas into it.
5.Slowly put flour, oat bran and baking soda and stir.
6.Add vanilla extract and prunes and mix.
7.Transfer the batter into the loaf pan and bake for 1 hour.
8.Check for doneness by inserting a wooden pick.
9.Allow the bread to settle at room temperature for 10 minutes.
10.Slice once it cools.

SERVING
11.Serve with tes/ coffee/ whipped cream.
