Dundee Bread

Ingredients
  Yeast 1 Ounce (baker's)
  Salt 1 Tablespoon
  Castor sugar 1 Teaspoon
  Milk 1 Pint, hot
  Butter 1 Tablespoon
  Flour 4 Pound
Directions

Mix yeast and sugar to a cream, cut up butter into a quart measure and fill with cold water.
Turn into a large jug.
Add 1 pint scalded milk.
Cool to warm and pour over yeast.
Turn into a bowl and add the flour mixed with salt.
Stir for 3 minutes, cover and place in a luke- warm oven till dough doubles itself.
Remove from oven and stir well for a couple of sec- onds, then pull out dough onto a slightly warmed floured board.
Divide in four equal parts.
Knead each well.
Place in a greased loaf tin, stand in a warm place and cover with a large cloth, away from draughts.
When double their size, bake loaves in a hot oven (450° F) for 15 minutes; reduce heat to moderate and bake till ready.
