|Vegetable oil||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|Eggs||3 , lightly beaten|
|Vanilla extract||1 Teaspoon|
|Mangoes||2 Cup (32 tbs), peeled cored and cubed|
|Golden raisins||1⁄4 Cup (4 tbs)|
|Shredded coconut||3 Tablespoon|
Preheat oven to 350°.
Grease and flour pan.
Sift together flour, soda, cinnamon, nutmeg, and salt.
In a large mixing bowl, combine vegetable oil and sugar, blending well.
Gradually stir in flour mixture alternately with eggs.
Beat in vanilla; stir in mango pieces to distribute evenly.
If desired, add golden raisins and coconut.
Pour mixture into prepared loaf pan; let rest for 20 minutes until batter bubbles slightly.
Bake 45-60 minutes.
Remove from pan; cool and slice.
